Robin, my sister Heidi & my late brother, J. Martin, grew up
with a fabulous cook. Mom cooked for us & it was always
meat, potatoes & dessert & iced tea for a drink.
While growing up, some of her dishes were, uh.. not our
favorite. You know how kids are, well, we learned quickly to
fill our mouths, motion that we had to go to the bathroom &
flush the offending food down the toto.. we also learned
that stuff like corned beef, stuff like the large sausage
things (no idea what they were, but they were like bologna
tied in a circle.. uh), & liver & onions.. float. No matter
how many times we flushed the toto.. it wouldn't go away.
So, defeated, we learned to like a lot of stuff..
Here is one of my personal favorites for the flavor alone.
Mom's fabulous Pork Chop & Peas Casserole...

brown the
floured cubes of pork with onions .. |

while the pork cubes are browning, put a layer of peas &
some of the fluid on the bottom of a casserole dish.. |

add a
layer of the browned pork/onion mixture.. |

add
another layer of the peas & juice |

3rd layer, always top with some of the flour mixture from
the plate to make the pea juice thicker, like a gravy! |

put in
microwave for 20 minutes... |

done! |

This is what it looks like when finished. Serve with baked
potatoes.. the blended flavors are fabulous! Enjoy! |
